Thank you! Our recipe is very simple. We sliced and baked two eggplants (no breading, although I'm sure that'd be delicious) and made a batch of Heidi Swanson's five-minute tomato sauce (viewable here: http://www.101cookbooks.com/archives/five-minute-tomato-sauce-recipe.html). Then we layered as follows: a bit of sauce, eggplant, some fresh basil, mozzarella cheese, more sauce, more eggplant, more basil, etc. Topped with a mix of mozzarella and parmigiano.
