What's better than homemade eggplant parmesan?

Eggplant parmesan with a clementine clafoutis for dessert. Eaten with good friends, of course.

Thank you! Our recipe is very simple. We sliced and baked two eggplants (no breading, although I'm sure that'd be delicious) and made a batch of Heidi Swanson's five-minute tomato sauce (viewable here: http://www.101cookbooks.com/archives/five-minute-tomato-sauce-recipe.html). Then we layered as follows: a bit of sauce, eggplant, some fresh basil, mozzarella cheese, more sauce, more eggplant, more basil, etc. Topped with a mix of mozzarella and parmigiano.
